Spanish Chicken Skillet

Ingredients

Flour1/4 Cup
Salt1 tsp
Paprika2 tsp
Garlic Powder1 tsp
Thyme1 tsp
Pepper1/4 tsp
Chicken Breast (strips)1 1/2 Lbs
Olive Oil2 Tbsp
Yellow Onion (sliced)1 medium
Bell Pepper (sliced)1 medium
Garlic (minced)1 clove
Diced Tomatoes1-14 oz can
Chicken Broth1/2 Cup
Crushed Red Pepper Flakes1/2 tsp

Directions

  1. In a small bowl mix flour, salt, paprika, garlic powder, thyme, and pepper to make spice mix.

  2. Use 2 Tbsp of spice mix to coat the raw chicken.

  3. Put the olive oil in a pan and sear the chicken. Set aside the chicken after mostly cooked.

    Do not over cook the chicken, we mainly want to brown it/seal it.

  4. In the same pan, slightly cook the onion, garlic, and bell pepper over medium-heat.

  5. Add the diced tomato with juices. Heat through.

  6. In a small bowl, mix the chicken broth and the remainder of the spice mix. Mix well.

  7. Add the chicken broth mix to the pan. Stir well.

  8. Add the chicken back into the pan and simmer for 10 minutes.

  9. Add the red pepper flakes and serve over white rice.
