Ingredients
| Flour | 1/4 Cup |
| Salt | 1 tsp |
| Paprika | 2 tsp |
| Garlic Powder | 1 tsp |
| Thyme | 1 tsp |
| Pepper | 1/4 tsp |
| Chicken Breast (strips) | 1 1/2 Lbs |
| Olive Oil | 2 Tbsp |
| Yellow Onion (sliced) | 1 medium |
| Bell Pepper (sliced) | 1 medium |
| Garlic (minced) | 1 clove |
| Diced Tomatoes | 1-14 oz can |
| Chicken Broth | 1/2 Cup |
| Crushed Red Pepper Flakes | 1/2 tsp |
Directions

In a small bowl mix flour, salt, paprika, garlic powder, thyme, and pepper to make spice mix.

Use 2 Tbsp of spice mix to coat the raw chicken.

Put the olive oil in a pan and sear the chicken. Set aside the chicken after mostly cooked.
✦Do not over cook the chicken, we mainly want to brown it/seal it.

In the same pan, slightly cook the onion, garlic, and bell pepper over medium-heat.

Add the diced tomato with juices. Heat through.

In a small bowl, mix the chicken broth and the remainder of the spice mix. Mix well.

Add the chicken broth mix to the pan. Stir well.

Add the chicken back into the pan and simmer for 10 minutes.

Add the red pepper flakes and serve over white rice.
