This is one of my favorite recipes. I believe it originates from the lid of a Quaker Oats can.

Ingredients

Unsalted Butter1 Cup
Eggs2 Large
White Sugar1/2 Cup
Brown Sugar1 Cup
Vanilla Extract2 tsp
Quick Oats (Dry)3 Cups
Flour1 1/2 Cups
Baking Soda1 tsp
Salt1/2 tsp
Semi-sweet Chocolate Chips1 Cup

Directions

  1. Preheat oven to 325° convect / 350° bake. Use convect if you have it.

  2. Soften butter. Don't melt. Put in mixing bowl.

  3. Add both sugars. Stir.

  4. Add eggs and vanilla. Stir.

  5. Add flour, baking soda, and salt. Stir.

Use a strainer to sift the flour. This removes chunks and improves consistency.

  6. Add oats. Stir.

It is crucial that they are "Quick" oats, not regular.

  7. Add chocolate chips. Stir.

You can substitute raisins, but that sounds icky to me.

  8. Put on cookie sheet and bake for 10 minutes.

  9. Remove from oven immediately and let cool.
