This is one of my favorite recipes. I believe it originates from the lid of a Quaker Oats can.
Ingredients
| Unsalted Butter | 1 Cup |
| Eggs | 2 Large |
| White Sugar | 1/2 Cup |
| Brown Sugar | 1 Cup |
| Vanilla Extract | 2 tsp |
| Quick Oats (Dry) | 3 Cups |
| Flour | 1 1/2 Cups |
| Baking Soda | 1 tsp |
| Salt | 1/2 tsp |
| Semi-sweet Chocolate Chips | 1 Cup |
Directions
-
Preheat oven to 325° convect / 350° bake. Use convect if you have it.
-
Soften butter. Don't melt. Put in mixing bowl.
-
Add both sugars. Stir.
-
Add eggs and vanilla. Stir.
-
Add flour, baking soda, and salt. Stir.
✦Use a strainer to sift the flour. This removes chunks and improves consistency.
-
Add oats. Stir.
✦It is crucial that they are "Quick" oats, not regular.
-
Add chocolate chips. Stir.
✦You can substitute raisins, but that sounds icky to me.
-
Put on cookie sheet and bake for 10 minutes.
-
Remove from oven immediately and let cool.
