Mint Chocolate Chip Cookies

Soft and delicious, double chocolate, mint cookies.

Ingredients

Dark Chocolate & Mint Chips1 2/3 Cups
Flour2 Cups
Baking Cocoa2/3 Cup
Baking Soda1 tsp
Salt1/2 tsp
Butter (softened)1 Cup (2 sticks)
Granulated Sugar2/3 Cup
Brown Sugar (packed)2/3 Cup
Vanilla Extract1 tsp
Eggs2 large

Directions

  1. Preheat the oven to 325°.

  2. Combine the flour, cocoa, baking soda, and salt in a mixing bowl. This is the dry mixture.

  3. In another larger bowl, use a mixer to beat the butter, both sugars, and the vanilla until creamy. This is the wet mixture.

  4. Add the eggs one at a time to the wet mixture and beat them in well.

  5. Add the dry mixture to the wet mixture a little bit at a time, and combine thoroughly.

  6. Stir in the chocolate/mint chips.

    These are are sold in a combined chocolate chip plus mint chip pack. There are likely name brand and store brand options.

  7. Dole the cookie dough out on baking sheets in ~1.5" balls.

    You can also make mini-sized cookies, just use .75" balls of dough and subtract a couple of minutes from the bake time.

  8. Bake for 11-13 minutes, until they are puffy. Remove from oven and allow to cool.
