Soft and delicious, double chocolate, mint cookies.
Ingredients
| Dark Chocolate & Mint Chips | 1 2/3 Cups |
| Flour | 2 Cups |
| Baking Cocoa | 2/3 Cup |
| Baking Soda | 1 tsp |
| Salt | 1/2 tsp |
| Butter (softened) | 1 Cup (2 sticks) |
| Granulated Sugar | 2/3 Cup |
| Brown Sugar (packed) | 2/3 Cup |
| Vanilla Extract | 1 tsp |
| Eggs | 2 large |
Directions

Preheat the oven to 325°.

Combine the flour, cocoa, baking soda, and salt in a mixing bowl. This is the dry mixture.

In another larger bowl, use a mixer to beat the butter, both sugars, and the vanilla until creamy. This is the wet mixture.

Add the eggs one at a time to the wet mixture and beat them in well.

Add the dry mixture to the wet mixture a little bit at a time, and combine thoroughly.

Stir in the chocolate/mint chips.
✦These are are sold in a combined chocolate chip plus mint chip pack. There are likely name brand and store brand options.

Dole the cookie dough out on baking sheets in ~1.5" balls.
✦You can also make mini-sized cookies, just use .75" balls of dough and subtract a couple of minutes from the bake time.

Bake for 11-13 minutes, until they are puffy. Remove from oven and allow to cool.
