Ever wonder what to do with cream of tartar?

Ingredients

White Sugar1 Cup
Egg Whites4 large
Cream of Tartar1/4 tsp
Vanilla Extract1 tsp
Food ColoringOptional
Decorating PowderOptional

Directions

  1. Preheat oven to 175°.

  2. Line a cookie sheet with parchment paper.

  3. Create a double boiler(bain-marie). We don't want to use boiling water, we want to heat the water to a simmer and then take it off the heat.

  4. Add the sugar, egg whites, and cream of tartar. Whisk constantly until the sugar is completely dissolved.

  5. Put the egg mix in a clean room temperature bowl. Use a mixer to beat the eggs.

  6. Add the vanilla and food coloring. Continue mixing until stiff peaks form.

    I like to add red food coloring to make them pink!

  7. Transfer the mixture to a pastry bag with a star tip. Pipe on to the parchment paper.

  8. Bake for 1 1/2 hours.

  9. Turn off the oven and leave in oven for 4+ hours.

  10. If you can find it, dust the meringue smoochies with decorating powder.

    I use Wilton Brand white "pearl dust".
