Serve this with saffron rice and steamed broccoli.
Ingredients
| Cream Cheese (softened) | 3 oz |
| Butter (melted) | 3 Tbsp + 1Tbsp |
| Cooked Chicken (cubed) | 2 Cup |
| Salt | 1/4 tsp |
| Pepper | 1/8 tsp |
| Milk | 2 Tbsp |
| Scallions (chopped) | 2 Tbsp + More if you want |
| Crescent Rolls | 8 oz tube |
| Bread Crumbs | Enough to cover pillows |
Directions
-
Preheat oven to 350°.
✦Also start cooking saffron rice if you are going to have that on the side. It's important to have but ultimately optional.
-
Combine 3 Tbsp of the butter, the cream cheese, chicken, salt, pepper, milk, and scallions to make filling.
-
Open crescent rolls tube, they come in triangles so take two of them and connect them in the middle to make a square.
✦The dough comes out of the roll already pretty much in squares. Take the two triangles of a square and sort of squish them together along the seam. They need to be very well connected/integrated or the dough could rip open while baking.
-
Put filling in the center of the squares. Fold the corners in to cover the filling. Pinch the edges and form into completely sealed pillows. Place on a baking sheet.
✦The choice of baking sheet matters for even cooking. I find that using one of those thin and floppy baking sheets makes sure the top and bottom cook at the same rate. It's also good to spray a little oil on the pan to avoid sticking.
✦The dough doesn't have to be exactly a square. The two triangles come out of the package more of a long rectangle shape. You can stretch or roll out the dough but be careful not to rip it!
✦The technique for folding is up to you. Some people fold it like a wonton, some people put one sheet of dough on top of the other sheet, I like to use a long rectangle sheet of dough, put the filling on the center of one side, and flip the other side over onto it.
-
Brush each pillow with the remaining melted butter and sprinkle with bread crumbs.
✦You can use bread crumbs with herbs or something fun like that.
-
Bake until golden brown. It's about ~12-17 minutes.
