Chicken Piccata

Super easy recipe with impressive flavor. I serve this with mashed potatoes or angel hair pasta and broccoli.

Ingredients

Chicken Breast1 Lb
SaltUp to you
PepperUp to you
Flour1/2 Cup + 1 Tbsp
Butter1 Tbsp
Olive Oil2 Tbsp + 1 Tbsp
Garlic (minced)2 cloves
Red Chili Flakes1/4 tsp
Capers(drained)1 Tbsp
Lemon Juice1 large
Chicken Broth1 1/2 Cups
Lemon (sliced, thin)6-7 slices
Italian Parsley (chopped)Up to you

Directions

  1. Cut the chicken sideways to make thin fillets

  2. Season the chicken fillets with salt and pepper.

  3. Coat the chicken fillets with flour

  4. Heat 2 Tbsp of oil in large skillet on medium-high.

  5. Cook the chicken on both sides until golden brown. Remove the chicken and set aside, but keep chicken drippings in skillet.

    Find a way to keep the chicken warm in the meantime.

  6. Add 1 Tbsp oil and the garlic and saute.

  7. Add the chili flakes, capers, lemon juice, lemon slices, and chicken broth to the skillet. Stir and heat on medium-high until the liquid has reduced by 1/2.

  8. Whisk 1 Tbsp of flour and the butter into the reducing liquid. Cook for 1-2 more minutes.

  9. Season sauce with salt and pepper.

  10. Serve the chicken with sauce poured over. Garnish with parsley.
